Double the recipe for Slow Cooked Spaghetti Sauce with Ground Meat

1 1/2 lb. ricotta cheese
3 eggs
2 c. grated Parmesan cheese
pinch of nutmeg
3 Tbsp. chopped flat-leaf parsley
1/2 t. salt
3/4 lb. no-boil lasagna noodles

Directions:
Directions:
Heat oven to 350. Mix together in a bowl the ricotta, eggs, mozzarella, 1 cup of the Parmesan, nutmeg, parsley, salt, and a few grindings of black pepper.

Spoon a thin layer (about 2/3 cup) of meat sauce over the bottom of a roasting pan and place a single layer of no-boil noodles over it, overlapping slightly. Spread with a second layer of meat sauce, then 1/3 of the ricotta mixture. Repeat twice, using noodles, sauce and ricotta mixture. Finally add one last layer of pasta and then meat sauce on top. Sprinkle with remaining 1/2 cup Parmesan.

Cover tightly with aluminum foil and bake for 40 minutes. Remove foil and bake for 15 - 20 minutes until bubbly and browned. Remove from oven and allow to cool for 20 minutes before serving.
