3 C all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 sticks butter, softened
2 C sugar
5 eggs
1 1/2 tsp vanilla extract
1 1/2 tsp coconut extract
1 C buttermilk
1/2 C shredded coconut
Coconut Cream Cheese frosting
Toasted Coconut

Preheat oven to 350 Line cupcake pan with papers, In med bowl, combine flour, baking powder, soda and salt. Set aside.In mixing bowl cream butter and sugar on med speed until light and fluffy. Add eggs and extract. Reduce speed to low and add flour mixture alternately with buttermilk. Beginning and ending with dry ingredients. Fold in cocnut.Spoon batter into cups 2/3 full. Bake 25 to 30 minutes or until tooth pick inserted to center comes out clean. Cool completely and frost with Coconut Cream Cheese Frosting.
Coconut Cream Cheese frosting-8 oz Cream Cheese, 1 stick butter cut into pieces and at room temperature, 1 C confectioners sugar, and 1 tsp. coconut extract. Mix on low speed and spread on cooled cupcakes.
