1 med. eggplant, cubed
1 c. milk
2 eggs
Salt and pepper to taste
1/4 c. onion
1 cup cheese (grated)
1 cup cracker crumbs

Directions:
Directions:
Boil eggplant in water until tender. Drain thoroughly. Combine onion, salt and pepper, cheese, cracker crumbs, milk, and eggs. Mix together well. Add drained eggplant to mixture. Stir until blended. Bake in small casserole dish for 30 mins. at 350 degrees.
