2 pounds potatoes (uncooked)
4 tblsp. all-purpose flour
1 medium onion (finely diced)
2 large fresh eggs
1/2 tsp. salt
1-1/2 tsp. vegetable oil

Optional Ingredients: (for potato pancake garnish)

Apple sauce
Smoked salmon
Chives (chopped)

Wash, peel, and shred potatoes with grater. Blot any excess moisture from potatoes with paper towels.
Gently combine potatoes, onion, salt, flour and eggs.

Heat saute pan over medium heat and add vegetable oil. Spoon potato mixture into pan and cook both sides to a golden brown.
Remove from pan.
Serve hot.
