Dressing:
1/2 c. olive oil (plus anchovy oil if desired)
1/4 c. white wine vinegar or 2 T. red wine vinegar and 2 T. lemon juice or 1/4 c. red wine vinegar
1/2 t. oregano
1/8 tsp. freshly ground pepper
1/4 tsp. salt
1 clove garlic cut in half...speared with toothpick
Salad Ingredients:
Romaine or iceberg lettuce or both.
Red or green onion
Tomatoes
Cucumber
Green pepper
Radishes
Anchovies (optional)
Greek or black olives
pepperocini
Feta Cheese (or use Jack cheese)

Directions:
Directions:
Put garlic in jar. Add remaining dressing ingredients and refrigerate several hours.
Toss together salad ingredients....use whatever you like. Remove garlic clove.....Toss dressing with salad.
