3 lbs. Chuck roast or Cross rib roast
1/3 cup olive oil
1 cup diced carrots
1 cup diced celery
2 red potatoes
1/2 red onion
3 cups of water
Salt and Pepper to taste

Directions:
Directions:
Pour olive oil into a 12" covered saute or 6 - 8 qt. covered stock pot on medium heat. Brown roast on both sides. (If the roast is too large, you may need to cut in half to handle better). Add carrots, celery, red onion and red potatoes. Add water (make sure water covers roast and vegetables). Salt and pepper to taste. Bring to boil. Reduce heat to low for about 1 1/2 hours checking periodically. Check for tenderness of roast. Should be very tender but not overdone.

Preparation time: 2 1/2 hours

(To speed up the cooking time I've used a pressure cooker to cook the roast for about 30 minutes. At the same time I saute all the additional ingredients with olive oil in a large stock pot on medium heat for about 15 - 20 minutes then add water. Then I combine the roast and cook till tender. Cuts about an hour of the preparation time).

The combination of the olive oil, the red potatoes and red onions give this standard pot roast dish a unique flavor. I usually serve with a side of brown rice and fresh salad.
