1 10 ounce package frozen chopped spinach, thawed and drained
1 lb Italian sausages with casings removed
1/4 lb fresh mushrooms, finely chopped
1 small onion, finely chopped
1 clove garlic, minced or mashed
1/4 tsp oregano leaves
1/8 tsp. pepper
Pie crust

Egg Mixture:
2 eggs
1/2 C milk
1 1/2 C shredded Swiss cheese
2 T grated Parmesan cheese

Preheat oven to 350

Break up sausages and saute in skillet until it begins to brown. Drain. Add mushrooms, onion, and garlic. Cook stirring 3 minutes. Add oregano, spinach, and pepper. Cook stirring until liquid is gone. Remove from heat and add to egg mixture. Fill your favorite pie crust. Bake for 30 minutes.
