Crust--
1 Pkg Graham Crackers (11)
3 1/2 oz Macadamia Nuts
1 Cube Butter (1/2 Cup)

Filling--
2 8oz Pkg Cream Cheese
4 large Eggs
2 tsp lemon Juice
1 Cup Sugar (less 1-2 Tbs)
2 tsp  Vanilla

Topping--
1 Cup Sour Cream
2 Tbs Sugar
1/2 tsp Vanilla

Directions:
Directions:
1. Melt butter and add to crushed Macadamia Nuts and crushed Graham Crackers. 

2. Place in Spring form pan and form crust on bottom and about half way up sides- refrigerate.

3. Preheat oven  to 300º 

4. Soften cream cheese in bowl in microwave. 

5. add eggs and beat with wire whisk, add lime juice and vanilla.

6. gradually add sugar and continue to beat until well mixed. 

7. Pour into  crust and bake 45-60 minutes. Check every 5 minutes after 45 minutes. Top of cheese cake should not brown but be cooked. Toothpick should com out clean when done.

8. Remove from oven and turn off.

9. Mix topping ingredients and pour over cheese cake rotate cheese cake to spread evenly.

10. Place cheese cake in warm oven for 15-30 minutes.

11. Remove from oven and let cool.

12. Cover and refrigerate.

I use a 9x3 inch Spring form pan. I serve with a topping of glazed strawberries. I is good with any fruit or just plain. I make it for Holiday Get Togethers. ENJOY
