2-3 Cups White Flour
1 Egg
1 8oz Container of Ricotta Cheese
Dash of Cinnamon (used in most past dishes in Northern Italy)

Directions:
Directions:
Mix and Knead all ingredients-  Add more than 2 cups of flour only if the dough is to sticky. you want the dough to be the consistency of pizza dough. Knead until dough blisters and is smooth. Grab a piece of dough and roll into a 5 inch rope, about 1/2 inch thickness. Next use a knife to cut 1 1/2 inch slices. on a floured surface take your piece of dough and place your finger in the middle of it. Then roll towards you until  it curls. place on a flour cookie sheet, when sheet is full freeze or add to boiling water once Gnocchi floats to the top strain. you can serve a pasta  or alfredo sauce with them or just add your favorite cheese like Asiago, Romano, or Parmesan.
