1 T. vegetable oil
2 cloves garlic, diced
1 each: red onion, red pepper, yellow pepper
1 C. black beans
3 carrots
1/2 c. broccoli
1/2 c. shittake mushrooms
2 T. cumin powder
2 T. Chili powder
1/2 c. red wine vinegar
1/2 c. brown sugar
1 t. salt and freshly ground black pepper
6 flour tortillas

Directions:
Directions:
Slice vegetables in 1/2" long, thin pieces. Saute the garlic in oil for one minute. Add the remaining ingredients and saute over med-high heat for approximately eight minutes. Serve wrapped in flour tortillas.

This is a great recipe. I used to make this a lot before I had children. Now I don't make it as much since it is too spicy for the boys. I thought you and Andy would enjoy this. He will never miss the meat! Very healthy!
