Cauliflower Soup Recipe

1 medium cauliflower
2 T. flour
2 c. half n' half
3/4 t. salt
1/4 c. butter
2/3 c. onion, chopped
2 c. chicken broth
1 t. Worcestershire sauce
2 c. grated cheddar cheese
Parsley to garnish

Cut cauliflower into flowerettes and cook until tender. Reserve liquid. Saute onion in butter.
Add flour and salt. Chicken broth and Worcestershire sauce. Bring to a boil.
Set out: light cream and half n half; half to warn to room temperature. This is important as it prevents curdling of cheese. Add to mixture slowly with
1 c. reserved liquid. Put in cauliflower and heat just to boiling. Add grated cheese and turn off heat and put on the lid. Garnish with the parsley.
