2 cups cooked rice
4 cups milk
5-6 eggs
1 cup brown sugar (can use white)
1/4 tsp salt
1/2 cup raisins
1/2 cup walnuts (chopped)
2 T butter

Directions:
Directions:
Heat milk, rice and butter. Beat eggs in a large bowl, add sugar, salt, and flavoring. Dust with raisins and flour, shake off so they won't fall to the bottom. Stir in raisins. Add milk and rice mixture. Pour into a large buttered casserole dish, sprinkle with nutmeg. Place the casserole dish in a heavy cast iron skillet half filled with water. Bake @350 for 1 hour.
