1 can black beans, rinsed and drained
1 1/2 c. cold cooked long grain rice
1 1/2 c. chopped fresh tomatoes (4 medium)
4 green onions, chopped
1 celery rib, chopped
1/2 c. chopped fresh spinach
2 T. minced fresh cilantro
1/2 c. fat-free Italian salad dressing (or regular)
1 c, (4 oz.) crumbled feta cheese

Directions:
Directions:
In a large bowl, combine first seven ingredients. Drizzle with dressing and toss to coat. Cover and refrigerate for 1 hour.
Just before serving, sprinkle with cheese.
