Spaghetti Alla Carbonara Recipe

10 oz pancetta, diced
1 chile, minced
1 # spaghetti
6 T pecorino
6 yolks
salt and pepper
2 T parmesan

Directions:
Directions:
In a saute pan, cook the pancetta on medium heat, to render all the fat. Add the chile and saute 1 minute. Whisk the yolks and the pecorino together, in a bowl and season with salt and pepper. Cook the pasta in boiling water and drain, reserving 1 cup of water. Place pasta in a serving bowl. Add the pasta water to the pecorino mixture. Pour the hot bacon and fat to the pasta and toss. Add the egg mixture and toss. Sprinkle with parmesan.
