4 boneless, skinless chicken breast trimmed

1 Tbsp vegetable oil
1 onion (minced)
1 C ketchup
3 Tbsp light molasses
3 Tbsp cider vinegar
2 Tbsp Worcestershire
2 Tbsp Dijon mustard
2 Tbsp maple syrup
1 tsp chili powder
1/2 tsp cayenne pepper

Directions:

Pound the thicker ends of the chicken, as needed. Pat dry with paper towels then season with salt and pepper.

Heat oil in a 12" non-stick skillet over medium heat until shimmering. Add chicken and cook until light brown on both sides, approximately 4 minutes. Transfer the chicken to a plate.

Add onion and 1/4 tsp salt to skillet. Return to medium heat until softened, approximately 5 minutes. Stir in the ketchup, molasses, vinegar, Worcestershire, mustard, maple syrup, chili powder, and cayenne pepper. Turn the heat to low and return the chicken to skillet with any accumulated chicken juice. Coat the chicken with the sauce.

Cover and simmer for 10 minutes or until the chicken has reached an internal temperature of 160º F.
