10 cups shredded zucchini
4 cups shredded onion
5 Tbs. pickling salt
1 Tbs. cornstarch
1 sweet red bell pepper, shredded
1 sweet green bell pepper, shredded
5 cups sugar
2 1/2 cups cider vinegar
1 Tbs. turmeric
1/2 Tbs. black pepper
1 tsp. celery seed
1 tsp. mustard seed





Directions:
Directions:
Mix zucchini and onion with salt and let stand over night.
Drain well. In large pot, add remaining ingredients. bring to a boil, lower heat and simmer 30 minutes. Put into sterilized jars and seal. Label when cool.

This is the best relish I have ever had. I love it on hot dogs, burgers, in ham salad, egg salad or just as an accompaniment.
