-Chicken pieces, thighs or breasts work best
-Lemon Juice several cups
-Olive Oil 4 Tbsp
-Oregano or Italian Seasoning

Directions:1. Use an oven safe baking pan lined with foil.2. Marinate Chicken, skin side down in 1 to 2 inches of lemon juice, at least 30 minutes, but up to 4 hours is best (not overnight).3. Drizzle olive oil over chicken.4. Sprinkle generously with oregano and a little salt & pepper on top.5. Bake at 375 to 400 degrees for about 35-40 minutes.6. Remove pan from oven. Carefully turn the chicken skin side up.7. Sprinkle generously with oregano and a little salt & pepper on skin side.8. Return pan to oven. Bake for 20-25 minutes at same temperature until finished.9. The chicken has to cook at least 1 hour and should be golden brown on skin side.10. Drain chicken on paper towels and serve warm over rice.
