1 C oatmeal
1 C orange juice
3 C flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 C sugar
1 tsp. salt
1 C oil
2 eggs
2 C blueberries

Directions:
Directions:
Soak the oatmeal in the orange juice for 15 minutes. In a separate bowl, mix the dry ingredients together (flour baking powder, baking soda, sugar, and salt). In a large bowl, combine oil and eggs, then add the oatmeal/orange juice mixture. Add the dry ingredients and mix until just moistened. Fold in blueberries. If blueberries were frozen, rinse them in a colander until the water runs clear. Grease two 12-muffin tins and divide the batter between the cups. Bake at 400 F for 20 minutes. Dip the tops of the muffins in melted butter and cinnamon sugar.
