3 pheasants, split
2 c. sliced mushrooms
1/2 c. butter
1 c. dry white wine
2 T. lemon juice
1/2 c. scallions
1 tsp. salt
freshly ground black pepper

Directions:
Directions:
Saute' pheasants for 10 minutes. Remove and saute' mushrooms for 10 minutes. Return pheasant to skillet. Add wine, lemon juice, scallions, salt and pepper. Cover and simmer for 1 hour or until tender. Serve with wild rice.
