For meat loaf:
1-1/2 lbs ground beef, 3/4 c oatmeal (quick) uncooked, 2 eggs, beaten, 1/4 c chopped onion,
2 t salt, 1/4 t pepper, 1 c tomato sauce

For sauce:
1 med onion, chopped.
1 heaping T shortening or 2 T olive oil.
2 T flour. Tomato sauce - large can,
1 c water,
1 t salt, 1 t chili powder, 1/4 t pepper

Directions:
Directions:
Make sauce first. Lightly cook onion in oil and lightly brown the 2 T flour in the oil and onion mixture. Add tomato sauce and water and simmer until of gravy consistency. Add seasonings.

Meat loaf preparation: Mix all ingredients thoroughly and form into small individual loaves or 2 or 3 larger loaves.

Add meat loaves to sauce and cook over low-medium heat on top of stove (turning and basting with sauce occasionally) for about 45-60 min. This can also be baked in the oven for 1 hr at 350 degrees.
