1 lb shredded cheddar cheese
1 lg jar chopped pimientos
2 T flour
2 T butter or marg.
1/2 c mustard
1 beaten egg
vinegar and/or pimiento juice (for desired consistency)

Directions:
Directions:
This is Grandmomma's recipe for Pimiento Cheese. Used for sandwiches for CYF on Sunday nights!

Melt butter and add flour to make a roux. Gradually add mustard and beaten egg. Then add the vinegar and/or pimiento juice until sauce is desired consistency (like mayo). Pour over grated cheese. Salt & pepper to taste. Spread on bread for sandwiches and enjoy! This is tart and different from the usual, but there are never any leftovers!
