"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway
2 tsp. Wrights liquid smoke 2 tsp. water 5 lbs. pork butt or any amount rock salt
Lightly cover the port meat with rock salt (you don't want it to salty). Place the pork meat in the crock pot. Set the crock pot to the lowest setting. Add 2 tsp. of Wrights liquid smoke into the crock pot. Add 2 tsp. of water. Cover and cook for 7 hours. Pork will be tender. Use two forks to pull apart if needed.
This is a simple dish, you just need to time it right. Either have it cook overnight or start it in the morning and it will be ready for dinner. Suggestions: serve with rice and cooked cabbage or serve as a sandwich.
