2-4 unpeeled potatoes
Pam
1 c. shredded Co-Jack cheese
6 bacon slices (cooked and cut up- I use pre-cooked bacon)
1/3 c. green onion slices
1/2 c. barbecue sauce

Directions:
Directions:
Preheat oven to 450. Cut potatoes into 1/4 inch round slices. Place on cookie sheet and spray both sides with Pam. Bake for 20 minutes, until slightly brown, remove from oven. In a bowl, combine cheese, bacon, and green onion. Brush top of potatoes with barbeque sauce, then sprinkle with cheese mixture. Bake an additional 3-5 minutes to melt cheese.
