1# shrimp (41-50 count)

Shrimp Marinade:
1 tbsp. sherry
1/2 tsp. salt
1 small egg white, beaten (frothy stage)
1 tbsp. cornstarch
1/2 tbsp. oil

1 C. cornstarch
2 C. vegetable oil

Ginger Sauce:
1 tbsp. catsup
1 tbsp. chicken broth
2 tbsp. sugar
1/2 tsp. chili sauce
3 cloves garlic, pressed
1/4 tsp. ground ginger

Directions:
Shell and devein shrimp. Rinse in cold water and pat dry. Combine marinade ingredients in large bowl. Place shrimp in marinade for 30 min. Place cornstarch in small bowl. Coat shrimp well with cornstarch, using colander to remove excess cornstarch. Heat oil to 375. Fry 1/2 of shrimp for 2 min. Remove with strainer. Fry remaining shrimp.
In separate pot, combine sauce ingredients then bring to boil. Add shrimp and toss to coat evenly with sauce.
