1 box (12 oz) Large Shells
1 jar (26 oz) Spaghetti Sauce
15 oz Ricotta Cheese
2 C. Mozzarella Cheese
1/2 C. Parmesan Cheese
6 oz. bagged spinach
3 cloves garlic (minced)
2 tbsp fresh oregano (chopped)
4 tbsp fresh parsley (chopped)
2 eggs
olive oil

Directions:
Directions:
Cook the noodles to be a little underdone. Drain, rinse, and set aside.

Heat oil in a skillet. Saute garlic & spinach until the spinach is wilted, taking care not to burn the garlic. Remove from heat and set aside.

In a medium bowl beat eggs. Add ricotta cheese, mozzarella, oregano, and parsley. Add in spinach mixture.

Pour a thin layer of sauce into 9" X 13" glass baking dish. Fill shells with cheese mixture and place into dish. Repeat until cheese mixture is gone (this may not use all the noodles). Pour remaining sauce on top of the noodles. Sprinkle Parmesan cheese over the sauce.

Cover with non-stick foil and cook at 350 for 30 minutes. Remove foil and cook for an additional 5 minutes. Allow to cool for 10 minutes before serving.

This is one of my favorites. You can use manicotti shells instead of the large shells. This dish makes excellent left overs as well.
