8 eggs
2 cups heavy cream
2 cups milk
2` (6 oz) pkg. cornbread stuffing mix
1 lb, browned, spicy pork sausage (we like Jimmy Dean)
1 cup dried cranberries
Optional: cup diced onion or 1 bunch cleaned and chopped green onion
Optional: top with shredded cheese and melt before serving

Pre-heat oven to 350 degrees and spray a 9X13 baking pan with non-stick spray. Beat eggs, stir in cream and milk. Add stuffing mix, browned meat and dried cranberries stir until well mixed. Pour in pan and bake for 30 - 40 minutes or until set in center, let stand 5 minutes before removing from pan.
