2 tsp. salt
2 T. yeast
2/3 c. warm water
6 1/2 c. whole wheat flour
1 T. melted butter

Directions:
Scald milk, add sugar, salt and stir until dissolved. Let stand until lukewarm. Dissolve yeast in water. Add to milk mixture. Add 3 cups of flour and melted shortening. Work in remaining flour. Place on lightly floured board, using white flour. Knead 10 minutes. Place in a large bowl and cover with towel and place away from drafts. Let rise double its bulk. Punch down and scoop out on floured board. Shape into 2 loaves and place in greased loaf pans. Cover and let rise to double size. Bake at 400 for 10 minutes then reduce heat to 375 for 40 minutes. When perfectly baked, loaves will tumble out of pans easily and give a hollow sounds when rapped on bottom and sides. Brush with butter.
