5 lbs of Potatoes
1/2 dozen eggs (hard boiled)
1 6oz jar of dill pickle relish
1 med onion (diced small)
1 1/2 cup mayo
1 tablespoon mustard
Salt & pepper

Directions:
Directions:
Peel and dice potatoes, add to salted water and boil until done. Drain - Pour in bowl while still hot!
Add pickles, onions, eggs (diced) and mix together. In separate smaller bowl, mix mayo and mustard, salt and pepper. Add mayo mixture to potatoes, stir.

Best if served hot !

This recipe is an especially favorite of my baby brother Quincy. I have a sneaky suspicion that he gets a real kick out of the thought that I am chopping up all of those ingredients. Little does he know that Monica usually always helps me.
