1 c. uncooked wild rice
2 1/2 c. water
1 1/2 tsp. salt
4 tbsp. butter
5 tbsp. flour
1 c. chicken broth
1 1/2 c. evaporated milk
2 c. cooked chicken, diced
3/4 c. mushrooms, sliced
1/4 c. pimento, diced
1/2 c. green pepper, diced
1/2 c. almonds, sliced

Cook rice with water and one tsp. salt. Combine butter, flour, and chicken broth. Simmer over low heat until butter melts. Add milk, one tsp. salt, chicken, mushrooms, pimento, and green pepper. Mix. Add rice. Place in buttered casserole dish. Cover with almonds. Bake at 350, uncovered, 30-40 min.
