3 eggs, divided
1 1/2 c. hot cooked wild rice
3 oz. cheese, grated, divided
3/4 tsp. salt
2 1/4 c. thawed frozen spinach, well drained
3 tbsp. skim milk
1/8 tsp. pepper
1 c. sliced mushrooms

Directions:
Directions:
Beat one egg; stir in rice, half the cheese, and salt. Press firmly into an even layer on the bottom of a 9 in. pie, cake, or quiche pan. Beat remaining eggs; stir in spinach, milk, pepper mushrooms, and remaining cheese. Spoon into pan. Bake at 375 for 30 min. or until cooked through. Cool 15 min. before serving.
