2 lb. fresh spinach
1 tbsp. olive oil
1/2 c. pine nuts (or walnuts)
3 tbsp. chopped basil
2 tbsp. Italian parsley
1 clove garlic, minced
1 small onion, finely chopped
2 tbsp. cider vinegar
Dash of salt

Directions:
Directions:
Wash and tear the spinach, removing heavy stems. Heat a large skillet. Add the oil and nuts and saute until golden. Add remaining ingredients. Stir, cover, and cook 2 min., until the spinach is barely tender.
