3 lb. chicken
1 cup rice
medium onion, chopped
stalk of celery, chopped
parsley, chopped
1/2 bell pepper, chopped
pimento, if desired for color
salt and pepper

Directions:
Directions:
Cook rice according to directions. Brown celery and onion in the butter, Add bell pepper, parsley,pimento,salt and pepper. Mix with rice.

Place chicken on foil in large pan. Place rice mixture in and around chicken. Sprinkle salt, pepper and paprika over the chicken.If you feel that the chicken needs more fat, you may rub with softened butter before sprinkling the salt, pepper and paprika. Wrap foil up and around chicken to cook covered.

Bake at 350 for 1 1/2 hours. Turn back the foil the last few minutes so that the chicken can brown.
