1 pkg. (10oz.) frozen chopped spinach
1 c. low-fat cottage cheese
1/4 tsp. salt
1/4 tsp. nutmeg
1/8 tsp. pepper
2 eggs, separated
1 T. grated parmesan cheese

Directions:
Directions:
Cook chopped spinach and drain very well. Add cottage cheese, salt, nutmeg, and pepper, mix well. Add egg yolks, mix well. Beat egg whites until stiff; fold through spinach mixture. Pour into a greased baking dish. Bake at 350 degrees for 10 minutes, then sprinkle with parmesan cheese and bake 10 minutes more, or until firm.
