3 medium tomatoes, seeded and diced
1 medium red onion
1 jalapeño, seeded and chopped, optional
Juice of ½ lime
2tbsp. cilantro chopped
Salt and pepper to taste

Combine all ingredients in a large bowl. Serve immediately or refrigerate for up to a week.

To make guacamole, just mash 3 Haas Avocados and combine with 1/3 of the pico de gallo with juice of additional 1/2 lime and salt and pepper.
