1 9" unbaked pie crust
1 lb pork sausage (I use Jimmy Dean bulk)
1 lb. sliced fresh mushrooms
1/2 cup minced fresh parsley
2 eggs
1cup half and half
1/2 cup grated/shredded Parmesan
1/4 tsp. salt

Directions:
Directions:
Crumble sausage in large skillet and add mushrooms. Cook over med/high heat, stirring frequently until browned and all liquid from mushrooms has evaporated. Drain off excess fat. Stir in parsley. Beat eggs with half and half and Parmesan cheese; blend in mushroom mixture and salt. Pour into unbaked pie crust. Bake in 400 oven for 25 to 30 minutes, or until crust is well browned and filling is set. Let pie stand 10 minutes before cutting.

I always made 2 of these on Christmas morning for breakfast. You can make them the day before and heat pieces in Micro(1 min. or so) as you need them. Delish!~
