"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Wilted Spinach Salad, by Suzanne Kuhn, is from Suz's Family Favorites,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 bag of fresh Spinach 1/2 red onion sliced and halved 8 strips bacon 1 cup fresh sliced mushrooms
Dressing 1/3 cup bacon grease 1/3 cup white sugar 1/3 cup white vinegar
Wash spinach and place in bowl. Fry bacon and drain. Slice onion and mushroom and add to spinach. Crumble bacon and add to spinach. Warm grease, sugar and vinegar in a small pan. Just before serving, pour over spinach.
This recipe came from Grandma Anne. We were at Bob's Steakhouse in Seneca and we just loved this salad. The next day, we experimented and came up with the right ingredients.
