1 pkg of chicken breast
3 cans of Cream of Chicken soup
1 pint sour cream
2 4-oz cans of green chilies diced ( I like to use 2 4-oz cans of green enchilada sauce)
1 pkg of FLOUR tortillas
2 cups of cheddar cheese
1 1/2 cup green onions chopped
1 cup blacks olives chopped
3/4 cup salsa (optional)

Directions:
Directions:
To prepare chicken: boil chicken in water add seasoning salt to water. ( if desired can boil in chicken broth). Remove from water and shred chicken.

To prepare sauce: Combine and heat cream of chicken soup, sour cream, 1/2 cup green onions and fair amount of broth from cooking chicken to make sauce your desired consistency, (optional can add 3/4 cup of salsa).

To prepare enchiladas: Place layer of sauce on bottom of baking dish to prevent enchiladas from sticking to baking dish. Mix a little of the chicken with about 2 tablespoons of sauce in the middle of a tortilla and roll up. Place rolled enchiladas in pan fill pan with enchiladas then cover with remaining sauce. Top with desired amount of green onions and cheese. Bake at 350 for 30-40 min (until sauce is bubbling). Take out of the oven and top with chopped olives
