2 lb. catfish fillets
3 lb. onions
3 lb. potatoes
1/2 lb salt pork (fat back)
salt & pepper to taste

Directions:
Directions:
Slice salt pork and fry until crisp. reserve 1/2 of the grease. In a 8 qt pot add the reserved grease. Add 1/3 of the diced onions, then 1/3 of the potatoes, then half of the fish fillets. Top with some of the salt pork and salt and pepper. Repeat the process. The last layer should be onions then potatoes and salt pork. Add quart of water and simmer at medium heat until potatoes on top are tender. DO NOT STIR THE STEW AS IT WILL BREAK UP THE FISH.

As an option; crushed red pepper can be added for heat.
