1 T olive oil
4 skin on bone in chicken breast halves
4 skin on bone in chicken thighs
1 cup dry white wine
1 cup chicken broth
4 T tomato paste
40 garlic cloves, unpeeled (this seems like a lot but it really isn’t)
1 rosemary sprig or ½ t dried
1 thyme sprig or ½ t dried
1 bay leaf
¾ t salt
¼ t freshly ground pepper

Preheat oven to 375. In a large oven proof skillet fry chicken in olive oil just until skin is golden brown and remove to plate. In pan add wine, broth, and tomato paste scraping the bottom of pan to get browned pieces mixed into the sauce. Remove from heat and add garlic, rosemary, thyme, bay leaf salt and pepper. Return chicken to pan and toss to coat with the sauce. Cover and bake until chicken is cooked and the garlic is softened, about 1 ½ hours.
