24 squares wonton wrappers
1 5 oz. can chunk white chicken
C. mayo
1 teaspoon Asian seasoning mix (you can use Asian five spice mix)
1 1 inch piece of peeled fresh ginger root
1 can (8oz) sliced and chopped water chestnuts
C. grated carrots
C. finely diced red bell pepper
1 T cilantro or parsley, snipped

Directions:
Directions:
Press wrapper into mini muffin cup. Lightly spray wontons with veggie oil. Bake 8-10 minutes or until edges are golden. Remove and cool completely.
Combine chicken, mayo, seasoning and pressed ginger, water chestnuts carrots, bell pepper and cilantro.
Mix and fill cups garnish with additional cilantro.

This is a great make ahead recipe. I always carry these ingredients in the camper to use as a quick appetizer. You can prebake the shells and put them in a zip lock to use up to two weeks later.
