6-8 tart apples, pared, cored and thinly sliced (about 6 cups); if apples lack tartness, sprinkle with 1
T. lemon juice
- 1 C. Sugar, depending on tartness
2 T. flour
Dash of salt
1 tsp. ground cinnamon
Dash of nutmeg
Pastry for a 2 crust, 9-inch pie
2 T. butter

Directions:
Directions:
Combine sugar, flour, salt, and spices. Mix with apples. Line a 9-inch pie plate with pastry. Fill with apple mixture and dot with butter. Adjust top crust; crimp. Cut slits for escape of steam. Using an egg wash of 1 egg and 1 T. & , brush the top of the pie and sprinkle with sugar. Bake at 400 degrees for 50 minutes or until bubbly.
