5 pears, pared
3 T. flour
3 T. lemon juice
1 tsp. grated lemon zest
C. sugar
Topping:
C. flour
C. sugar
C. chilled butter
tsp. each of ground ginger and cinnamon
tsp. ground mace

Directions:
Directions:
Slice pears and sprinkle with lemon juice. Mix sugar, flour, and zest; stir into sliced pears. Place in 9 inch unbaked pastry shell and top with Crumble mixture. Bake the pie at 400 degrees for 45 minutes or until pears are tender.
Crumble Topping:
C. flour C. sugar
C. chilled butter
tsp. each of ground ginger and cinnamon
tsp. ground mace
Combine dry ingredients. Gradually add butter until corn meal consistency. Pour over top of pie.
