8 (6 inch) corn tortillas, divided
2 small cans of chopped green chiles
2 tsp. oil
C. chopped onions
1 tsp. ground cumin
1 clove garlic, minced
1 lb. cubed boneless, skinless chicken breast
2 cans (14 oz. each) chicken broth
2 cans (15 oz. each) pinto beans, drained and rinsed
1 10 oz. can green chile enchilada sauce
2 T. finely chopped cilantro
Sour cream for garnish

Cut four tortillas into inch strips. Spray with no-stick cooking spray. Spread in a single layer over cookie sheet. Bake in 400 degree oven until crisp, stirring once. Bake 10-12 minutes, or until crisp. Remove from oven.

Grate remaining corn tortillas and set aside.

Toss chicken with cumin. Heat oil in stock pot over medium-high heat. Cook and stir chicken 5 minutes. Remove chicken to paper towel to drain. Add onion and garlic to hot oil cooking for 3 minutes, stirring constantly. Stir in chicken, broth, beans, enchilada sauce, and grated tortillas. Bring to boil. Reduce heat; simmer, uncovered, 15 minutes. Pour soup into serving bowls and garnish with a dollop of sour cream, baked tortilla chips, and chopped cilantro.
