1 lb. macaroni cooked al dente in salted water

C. melted butter
bread cubes with no crusts
Pour butter over bread cubes.

tsp. salt
C. flour
tsp. Cayenne pepper
1 qt. boiling milk
tsp. nutmeg
tsp. black pepper
2 C. Gruyere cheese, grated
5 C. white cheddar cheese, grated

Directions:
Directions:
Melt butter in a sauce pan. Add flour and make a paste. Cook on medium-low heat for 3 minutes. Slowly add boiling milk, stirring constantly to avoid lumps. Add Gruyere and white cheddar cheeses and stir until melted and smooth. Add salt, pepper, cayenne pepper, and nutmeg.

To assemble: Pour cooked macaroni into greased baking dish. Pour cheese mixture over macaroni. Top with buttered bread cubes. Bake in 375 degree oven for 45 to 60 minutes until bread is golden brown. Remove and let cool for five minutes before serving.
