20-30 Red Corn Tortillas
1/2 Cup OIl
1 Large Onion
1 Clove Garlic
1.5 Lbs Hamburger Meat
16 OZ Sharp Cheddar Cheese
2 ( 14.5OZ.) Enchilada Sauce

Directions:
Directions:
Chop onions and garlic. Fry hamburger meat add onions and garlic. 15 - 20 minutes drain greeze.
Lightly fry tortillas 1 at a time in oil...about 10 seconds per side. Place on paper towel to pick up oil. KEEP TORTILLAS WARM...YOU WILL BE ROLLING them soon. Keep chopped onions and cheese on the side be where you will be stuffing the meat and rolling. NOW place a small amount of onion and cheese and hamburger in warmed corn tortilla. Now its time to roll. In a 2 inch casserole dish place your tortilla and the above and roll. After rolling what you have placed in casserole pour the enchilada sauce and sprinkle your cheese. a lid or foil over casserole dish place in oven 325 for 30 minutes. You'll know its done by smell and melted cheese.

You can use Chicken instead of Hamburger...Hot, medium or mild Enchilada Sauce, depneds on your tastes and temperature.. If you can not find red corn tortillas.you can use regular corn tortillas. HOWEVER THEY MUST BE CORN.
