Grease a 12X9 baking dish with cooking spray
1/2 to a whole jar jalapeño peppers (depending on how spicy you want it)
1 to 1 1/2 bags of shredded Fiesta Blend cheese
12 eggs, beaten

Directions:
Directions:
Preheat oven to 350º. Drain juice off of jalapeños and spread evenly over bottom of baking dish. Spread cheese evenly over peppers. Drizzle beaten eggs over cheese and peppers. Bake for 25 to 30 minutes or until eggs are cooked completely. Sprinkle approximately one cup of cheese over the top and put back in oven for 2 to 3 minutes.
