2 c. sugar
3 eggs
1 tsp. vanilla
2 c. grated zucchini
1/2 tsp. lemon rind
3 c. flour
2 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. baking powder
1/2 c. raisins
1/2 c. chopped nuts

Directions:
Directions:
Mix sugar, eggs, vanilla, zucchini & rind. Sift together flour, cinnamon, salt, soda & powder. Add to mix. Add raisins & nuts. Turn into 2 greased loaf pans or 1 bundt pan. Bake 325 for 1 hour.
