3 1/2 c. sweet potato, grated and raw
3 T. flour
3 eggs
1 c. sugar
1/2 c. brown sugar
1/2 stick butter, melted
1/2 TSR. cinnamon
1/2 TSR. ginger
1/2 TSR. salt
1/2 TSR. vanilla
1 lg. can condensed milk

Directions:

Sift all dry ingredients together. Best eggs with sugar and add milk and grated potatoes. Place in buttered casserole large enough to allow for puffing. Bake at 350-375.

Scrape down sides and stir twice while cooking to get inside to outside. This will prevent the middle from being raw.
