1-2 3oz pkg lime jello
5 c. hot water
4 c. cold water
1 3oz pkg. lemon jello
1/2 c. (or more) mini marshmallows
1 c. pineapple juice
1 8oz. pkg cream cheese
1 1lb 4oz can crushed pineapple, drained
1 c. whipped cream
1 c. mayonnaise (opt)
1-2 3oz pkgs. red jello
1/2 c. pecans, chopped (opt)

Directions:
Directions:
Dissolve lime jello in 2 cups hot water; add 2 cups cold water. Pour into a baking dish. Chill until partially set. Dissolve lemon jello in 1 cup hot water. Add marshmallows; stir to melt. Remove from heat. Add pineapple juice and cream cheese; beat until well blended. Stir in pineapple. Cool slightly. Fold in whipped cream, mayonnaise and nuts if desired. Chill until thickened but not completely set. Pour over lime gelatin. Chill until almost set. Dissolve red jello in 2 cups hot water; add 2 cups cold water. Chill until syrupy. Pour over pineapple layer. Chill until firm.

This is a great salad for Christmas. It has the red and green layers. I like to make it in a glass rectangular cake pan so that the colors show. Cyndi always makes this salad for Christmas dinner.
