3 large tomatoes, sliced
8 ounces fresh mozzarella, sliced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup fresh chopped basil
olive oil
balsamic vinegar

Directions:
Directions:
Slice cheese as thin as possible. Slice tomatoes. On a large platter arrange alternating slices of cheese and tomatoes. Sprinkle with basil. Drizzle the olive oil and balsamic vinegar over cheese and tomatoes.

This salad never makes it to the table, it disappears while I'm putting the rest of the dinner together. A favorite of all my adult non eating vegetable children. Especially good in the summer with home grown tomatoes but I do make it all year using Romas when I can't find good tasting large tomatoes.
